Comfort, done right
The dish everyone gets wrong. We don't. Egg yolk and Pecorino Romano are emulsified with hot pasta water into a glossy sauce, studded with crisp guanciale and cracked pepper. No cream, no peas, no shortcuts.
A proper Sunday lasagna — sheets of fresh pasta layered with a ragù that simmers for hours, besciamella, and Parmigiano, baked until the edges are lacquered and the center is molten.
Why our Carbonara has no cream
Authentic Carbonara has exactly five ingredients: pasta, guanciale, egg, Pecorino Romano and black pepper. There is no cream in the Roman original, and there is none in ours. The silkiness comes from egg yolk and cheese emulsified with starchy pasta water off the heat — a technique, not a dairy shortcut. Guanciale (cured pork cheek) renders slowly to give the dish its savory backbone.
Our Lasagna is the counterweight: rich, layered, and built for sharing. The ragù is a slow braise of beef and pork that cooks down for hours until it's deep and glossy, then it's layered with besciamella and Parmigiano between sheets of fresh pasta and baked. The corners crisp, the middle stays soft, and it holds heat long enough to make it the easiest tray to bring to a table full of people.
